Shopping for Pasta Tools and Kitchen Equipment:
Online or in Bologna
Looking to make fresh pasta like we did in class?
In section 1 (below) you’ll find my list of essential tools and equipment to make great pasta and my recommendations on where to find them online.
In section 2, I have listed 3 online stores where you can find all sorts of great cooking tools and equipment while in section 3 you’ll find three physical shops I think you should visit while in Bologna, Italy.

Pasta Board - Nonna’s Wood Shop has beautiful pasta boards. I especially appreciate that these are handmade and all have a wonderful visible grain that allows you to check your progress as you thin out your pasta sheet. Dan is very responsive and offers free shipping to the USA and Canada. They do finish their boards with vegetable oil which will wear off with use. Do not oil your boards afterwards! FYI, the pasta boards I use in class are 60cm x 100cm width.
Rolling Pin - Mattarello, Nonna’s Wood Shop has lots of choices but I’ve also included a nice one in My Amazon Store. Ideally, the length of the pin should match the width of your pasta board. My rolling pin is 100cm long, about 39 and 1/4 inches.
Scraper - always choose a metal scraper as the plastic and wooden ones tend to break! Do not use the metal scrapers intended for removing paint, as those are too sharp and you’ll likely ruin your pasta wooden board. There are several listed in My Amazon Store.
Vegetable brush - A stiff brush is perfect to scrub the dry bits of dough off your hands (with no water!), see my choices in My Amazon Store.
Spray bottle - for misting your pasta sheet with water on a warm day, it will help prevent a thin pasta sheet from drying out.
Pasta Knife - The perfect knife to cut and shake out your flat noodles is at the Antica Aguzzeria del Cavallo store (also online). The one with the wooden handle has a less than 2mm thick blade; perfect!
Pasta Cutters - You will find lots of options in all 3 online stores listed below.
Garganelli Boards & Dowels - Antica Aguzzeria del Cavallo carries the same type we use in Emilia-Romagna. Please do not use a gnocchi board or a dowel thicker than a normal pencil to make garganelli. Article about why not coming soon.
Gnocchi Boards - Lots of choices in all the places listed below.
Pasta Machines - Marcato & Imperia are great sturdy brands and are listed on My Amazon Store with accessories.
Drying trays - there are some in My Amazon Store, I hope to find the cardboard ones soon.
